Falukorv and bean casserole
     
Ingredients:
4 port new potatoes/rice
400 g Falukorv
1 onion, diced
2 peppers, yellow and red
0,5, 100 g zucchini, diced
100 g black beans/kidney beans
200 g chopped tomatoes
1 teasp ground cumin*
1 teasp chili powder*
1 tblsp oil

Cooking:

1. Boil rice or new potatoes

2. Rinse beans. Fry veggies and spices in oil in a pot. Add beans and let it heat up.

3. Add chopped tomatoes and let it simmer. Add salt to taste.

3. Dice the Falukorv in 2 cm pieces and fry separatelt in oil.

4. Add sausage to casserole. Add salt and pepper to taste. Let the casserole heat up.

5. Serve with rice or new potatoes.

 
 
 

Falukorv is part of everyday dishes in every Swedish home, it's as common as meatballs. It is a cooked rather mild sausage that is mostly used in cooking, but it can also be had in thin slices on a sandwich.
Here it's served in a sort of mexican version.
